Grilled Peaches with Oat Topping

Summer is officially here! I know because I’m writing this directly in front of the AC with a large glass of iced tea (with lots of ice!). I also know because of the amazing variety of summer fruits that are now in season! Cherries, strawberries, peaches, plums, watermelon…. The list goes on.

Let’s talk fruits on the grill. Grilling summer fruits brings out the sweetness of the fruit with an addictive smoky undertone. You can also do this indoors on a grill pan with similar results.

When you grill fruits you want to make sure you don’t cook them too long. Just long enough to get those deep grill marks and that charred flavor. 1-2 minutes on each side is all it takes.

Try to use very ripe fruit to get that sweetness, but if you can’t drizzle honey over the completed dish to amp up that sweetness if desired. Another option is to top it with vanilla ice cream for a cold and creamy sweetness boost. Any way you serve it this dish is a winner!! Enjoy!

Grilled Peaches with Oat Topping

Ingredients

1 Peach or Nectarine

1/4 Cup Oats

1 Tablespoon Brown Sugar

Pinch of Cinnamon

12 Tablespoons Oil

Instructions

Core the peach and cut it into 4-6 pieces
 
Combine oats, brown sugar, and cinnamon in a small bowl and set aside 
 
Heat a grill pan or grill to medium heat
 
Place the peach slices on the grill for 1-2 minutes on each side until deep grill marks are visible remove the slices from heat and put in a bowl or on a plate
 
In a pan add oil and your topping mixture. Stir constantly until the oats are toasted but not burned about 1 minute.  (you can use the grill pan for less to clean up but it’s definitely harder to stir) 
Pour topping over peaches and enjoy! 
 
 

Notes

For a fun addition add some vanilla ice cream on top!

For added sweetness drizzle some honey over the dish
